How a traditional tequila-making process creates an entirely new ingredient for our Agave Vinaigrette.

Our Agave Vinaigrette is made with Santa Sofia Premium Organic Agave Vinegar, a 100% agave vinegar produced in Los Altos de Jalisco. It's made using an agave byproduct created during tequila production, giving that ingredient another purpose through fermentation.


Big Flavor, Less Waste


That's what first made the ingredient interesting to us.

Food waste isn't always about what gets thrown away in a restaurant kitchen. It can also happen much earlier, during the production of the ingredients we use.

Santa Sofia takes something left from tequila production and turns it into a completely different ingredient: a bright, distinctive vinegar.

It's a good example of the kind of sourcing we look for at Two Step Taqueria. If an ingredient tastes great and makes better use of something that already exists, that matters to us.


Why It Works in Our Agave Vinaigrette


Of course, sustainability only gets an ingredient so far. It still has to taste good.

Agave vinegar gives our vinaigrette the acidity and brightness we want, along with a layered flavor that works especially well with our salads and bowls.

The result is a dressing with a purpose behind it, but one we chose first because it works on the plate.

We don't think one ingredient solves the problem of food waste.

But kitchens make hundreds of ingredient decisions, and those choices add up.
